Varietals & Harvest: 57% Cabernet Franc, 29% Cabernet Sauvignon and 14% Merlot, estate-grown and hand-harvested. The Cabernet Franc and Cabernet Sauvignon both picked October 15, 2022, at 23.1 and 22.5 brix respectively.
Winemaking: The grapes were sorted, de-stemmed and lightly crushed prior to being vinified separately by ambient/wild fermentation in tank. Pressed from skins for 20-months élevage in 29% new, 29% light use and 42% neutral French oak and blended. Estate bottled unfiltered and unfined 26 July 2024.
Wine Description: Opaque ruby in colour. A perfumed nose of wild raspberries, red currant, blueberry, wildflower, blood orange, lavender, cedar, cocoa nib and juniper. Medium-weight with a more elegant profile in the mouth revealing a mix of ripe cherry, currant, blackberry, plum, roasted red pepper, tar, graphite and clove. The wine is framed by fine, sandy and deeply layered tannins providing a lingering finish. Ideal drinking window from 2028 to 2038.
Acidity & pH: TA 5.59 g/L, pH 3.55,
Sweetness: Fully dry on the palate containing 2.0 g/L residual sugar
Alcohol by Volume: 13.5%
Production: 173 cases total, 15 cases of which were bottled in magnum
