Varietals, Vineyard & Harvest: 100% estate-grown cabernet sauvignon, clones 169 and 412, hand-harvested at Black Bank Hill on 3 November 2023 at 22.5 brix.

Winemaking: Destemmed and lightly crushed for an ambient/wild fermentation. Racked into French oak barrels for 20-months élevage of 15% new oak. Estate-bottled unfiltered and unfined at Black Bank Hill on 25 July 2025.

Wine Description: Medium ruby in colour with warm and inviting aromas of ripe dark cherry, red currant, blackberry, oregano, eucalyptus, tobacco, clove and baking spices. Medium-plus in body, the palate continues with cassis, pomegranate, plum, wild raspberry, black tea, leather, cedar, tobacco and a lovely seam of cocoa through the finish. Medium-plus acidity and chewy but ripe tannins. Shows class and restraint with the potential to age beneficially in bottle for the next 5-10 years and drink well for several years beyond that.

Acidity & pH: TA 8.00 g/L, pH 3.41

Sweetness: Extra-dry on the palate containing 0.7 g/L residual sugar

Alcohol by Volume: 13.5%

Good quality, dense and concentrated but even-keeled cabernet sauvignon here from this high-achieving newish addition to the Ontario wine scene, with evident care and ambition applied to all wines including this, where aspirations are apparent in the hard-to-achieve, silky texture of this variety in a cool climate. Ripeness at harvest appears to have been spot on, neither over nor
under, and the depth of flavour speaks to low yielding vines and careful farming. Very good length, too. Best from 2028. Tasted March 2026.

Niagara cabernet sauvignon is almost always rather stringy and green compared to most warmer regions, but I have always liked the aromatics of versions that manage to express some ripeness. And I like the sense of blackcurrant, roasted herbs and subtle oak here, with floral lilac. It is estate grown with 20 months ageing in 15% new French oak. It medium wight, very taut, juicy and notably
tannic, but it is very expressive, intense and shows excellent length. Stick in the cellar, best after 2030. Tasted March 2026.
