Varietals, Vineyard & Harvest: 100% chardonnay, clones 95 and 548, grown and hand-harvested at Black Bank Hill on October 3 and 10, 2023 at 22.4 and 22.2 brix respectively.

Winemaking: 50% of the grapes were whole-bunch pressed directly into barrel, and 50% were de-stemmed and lightly crushed prior to being given 24-hours skin contact prior to being pressed. Both factions were racked into mostly third-use French oak barrels and fermented using wild/ambient yeasts. Élevage was 19-months on lees in same French oak. The wine was blended and estate-bottled without fining on 18 June 2025.

Wine Description: Medium golden straw colour. Aromas of quince, Meyer lemon, brioche, caramel, oak. A rich and elegant palate continues with layered flavours poached pear, clover honey, yellow apple, lemon meringue pie, paw paw, and pineapple.  Full-bodied, medium-plus acidity, with a very long finish.

Acidity & pH: TA 7.23 g/L, Malic acid 1.6 g/L, pH 3.27

Sweetness: Dry on the palate containing 2.9 g/L residual sugar

Alcohol by Volume: 13.9%

A subtle and stony chardonnay off the top that grows more generous and fruity on the palate, with evident density and ripeness and concentration of flavours. I like the cherry liqueur and crab apple nuances on the palate that add complexity and interest to the citrus and stone fruit flavours. Length and
depth are clearly indicative of a carefully crafted wine from low-yielding vines, sharply delineated, generous but composed. Another fine addition to the burgeoning top quality Ontario chardonnay scene. Drink from 2027-2033. Tasted March 2026.

This is a keen, balanced and bright chardonnay that captures an intriguing sense of being in an apple orchard, with fruits and ambient grasses and earth. Then in comes oak spice (nutmeg) and tobacco. Each component stands out. It is medium bodied, firm and crisp with excellent length. Two clones were harvested separately, barrel fermented in third-use French oak barrels then aged 19-months on lees in those same barrels. Tasted March 2026.

This chardonnay strikes an elegant balance between richness and freshness. It is delicately stony, with crystal clear, radiant flavours of ripe apples, nectarines, and firm peaches. Oak and lees influence is employed judicially here, adding nuance in the form of flavours of nutmeg and toast. The palate feels Feels rich and fleshy, with notable flavour concentration and bright acidity. The finish is very long, with well defined flavours of orchard fruit, peppered with spice. Tasted March 2026.
