Varietals, Vineyard & Harvest: 68% Pinot Gris and 32% Gewurztraminer, grown and hand-harvested at Black Bank Hill on 7 and 12 October 2023 at 23.7 and 23.0 brix respectively.
Winemaking: Both varietals were de-stemmed and lightly crushed prior to being pressed and racked into a neutral French oak barrels and fermented separately using wild/ambient yeasts. Given 19-months élevage on lees. The wine was blended and lightly fined prior to being estate-bottled on 18 June 2025.
Wine Description: Light straw colour. Aromas of honeysuckle, orange blossom, elderflower, honeydew and lilac. Medium plus in body and acidity, the palate continues with guava, lychee, quince, a soft and generous mouthfeel, a slight suggestions of sweetness on the front of the palate given the ripe fruits and a long and drying finish of marzipan and almond blossom.
Acidity & pH: TA 7.1 g/L, Malic acid 1.3 g/L, pH 3.24
Sweetness: Dry on the palate containing 4.0 g/L residual sugar
Alcohol by Volume: 14.1%
