Varietals, Vineyard & Harvest: 100% Cabernet Sauvignon, grown and hand-harvested at Black Bank Hill on 15 October 2022 at 22.5 brix.
Winemaking: The grapes for this wine were de-stemmed and lightly crushed prior to a wild/ambient fermentation in tank. The wine was pressed off skins and racked into a largely neutral French oak barrels and given 20-months élevage before being estate-bottled without fining on 26 July 2024.
Wine Description: Medium ruby in colour with aromas of ripe red fruits, red currant, blackberry, rose petal, oregano, thyme, tobacco, clove and baking spices. Medium-plus in body, the palate continues with ripe cherry, cassis, blood orange, black tea, leather, char, pastrami and olive, with chewy but ripe tannins and a long finish.
Acidity & pH: TA 5.77 g/L, pH 3.72
Sweetness: Extra dry on the palate containing <2.0 g/L residual sugar
Alcohol by Volume: 13.1%
